I have a question regarding animal sacrifice in Leviticus. Is there any significance to taking out the fat "that covers the inner parts" or "both kidneys with the fat on them near the loins" (3:3-4)? Also, why was kidney burned on the altar? Any symbolism? -- Tae

I am not aware of any symbolism here. I think the point was to remove as much fat as possible. You might want to consult a good commentary, however.
